Avocado Salad– an equally beautiful and delicious treat to welcome the hot summer weather, perfect to serve as a side or as a light dinner meal that’s healthy and easy!
Avocados: very easily one of my favorite foods, and very hard to pass up when I catch them 4/$1.00 at my local supermarket.
That in itself is a bargain! So much, in fact, I usually load up the bag and haul myself to the checkout. Avocados are my favorite breakfast, lunch and dinner meal – thankfully they are also great for your body, too!
When paired with tomatoes in this beautiful salad, avocados take on a new dimension of flavor.
Easy Avocado Salad
Lets talk about this salad – it’s absolutely stunning, a showstopper almost! It’s very simple to put together and will have everyone thinking that you are a master at creating food in the kitchen.
Not to mention, it’s practically fool-proof to put together:
- cherry tomatoes
- salt and pepper
- olive oil
- red onion, sliced thin
That is it! When cut and diced and thrown together, the end result is the most amazing, delicious salad you will have ever eaten in your lifetime. (I promise!)
Serving this Salad
This salad is perfect for the warm temps of summer – when you don’t want to make a heavy meal, it serves as a light dinner, or as a side dish to a more meatier alternative like this overnight beef brisket.
Or, works beautifully as a potluck dish to pass for your next party, get together, family reunion or simply just as a healthy alternative for you and the kids. Avocados are rich in healthy fats and when coupled with several other simple ingredients, the flavors amplify into something extraordinary.
