One of the best reasons to enjoy summer is for endless popsicles of all varieties – these summer strawberry popsicles are one of my kids favorite things to ask for all summer long.
Plus .. it’s strawberry season right now in Phoenix and for the last few weeks, we have had the most incredibly delicious strawberries in our CSA bag. Who needs popsicles from the box when you can make your own luscious homemade popsicles in a matter of 5 minutes and ready to place in the freezer?!
If I’m not careful, our 3 year old will finish off an entire tray of 6 on her own – who knew 3 year olds had such a huge belly for strawberry popsicles?
Simply throw the ingredients in the blender, puree, and then pour into your molds and place in the freezer for a few hours until frozen. If you prefer some strawberry chunks in your popsicles, divide the mixture – puree some, and keep some chunkier so that when you mix and pour, you have a chunkier strawberry popsicle.
Feel free to substitute the honey for sugar – whatever you have on hand will work great. You can pick up inexpensive popsicle sticks at your local craft store, Walmart or dollar store, but if you make popsicles frequently, I would invest in a few sets of popsicle molds.
When they are frozen and your kids are ready to enjoy them, wiggle them out – or carefully run each side with a bit of hot water to loosen the mold so you can pull out.
Easy and simple recipe for yummy homemade strawberry popsicles with fresh strawberries, sweetened with raw honey!
Ingredients
- 2 1/2 C. strawberries
- 1/2 C. water
- 3 Tbsp honey (or, alternative 1/4 C. sugar)
Instructions
- In your blender, combine all ingredients and puree until smooth.
- Pour into your popsicle molds and place in the freezer until frozen.
- You may have to run the side of the mold under a tiny bit of hot water to loosen from the mold before enjoying.
