Mango Coconut Lime Popsicles that come together in mere minutes with four simple ingredients to make a treat that’s absolutely out of this world delicious!
There’s nothing better than a simple popsicle recipe to get the kids excited.
Or, a simple popsicle recipe to get YOU excited for the summer (and hot weather!) ahead. Face it… we enjoy the winter, but once we’re in the deep trenches of summer, we can really really get tired of the hot heat rather fast! (at least I can!)
It’s only mid-April here in Arizona and our temps are [almost!] triple digits. Yikes! These mango coconut lime popsicles are one of the best ways to cool off, and enjoy the heat without adding to the hips!
The best part about these popsicles is that they only require a few simple ingredients, a blender, and your favorite popsicle mold.
Simply combine the ingredients, blend until smooth, and pour in your mold. I’ve been using the upright molds for years, but this year I opted for a flat, silicone mold and I’m loving it a bit better than the upright. I picked up my flat mold at my local grocer – but you can find several similar varieties on Amazon. It’s much easier to get the popsicles out of the flat mold than the upright mold, and they seem to freeze quicker, too.
I find myself spending a little more on a really GOOD mold because it lasts so much longer and it holds up better to washing.
Compared to picking up popsicles in the store, you really do save quite a bit over time making popsicles at home, especially considering the price of food has skyrocketed this last year or two.
Mango Coconut Lime Popsicles
These popsicles come together SO quickly with just a few simple ingredients:
- frozen mango (I love to buy frozen mango chunks in the bag at the grocer!)
- sweetened coconut yogurt
- fresh limes
- and agave syrup (feel free to substitute maple syrup or honey*)
*Using honey will not result in these being vegan!
Blend these four ingredients until smooth and pour in your favorite popsicle mold.
