There is no doubt that a crunchy broccoli salad might just be the perfect accompaniment to a hot summer, simply because you don’t have to turn on the stove or oven to make it. Even better, the dressing incorporates mayonnaise and honey instead of using refined sugar.
Even those who may not love broccoli will go heads over tails for this salad – which includes a combination of mayonnaise and balsamic vinegar, toasted slivered almonds, fresh shredded cheddar cheese, and diced onions.
You could actually take it a step further and add crispy cooked bacon pieces, sunflower seeds, and raisins – but even if you don’t have those, it still tastes incredible without!
The salad has a wonderful flavor that enhances with time, as long as you keep it covered in the fridge.

Whip together this crunchy broccoli salad in just minutes with a few simple ingredients. It's not only easy, it's incredibly delicious!
Ingredients
- 2 Tbsp honey
- 2 Tbsp balsamic vinegar
- 3/4 C. mayonnaise
- 1 lb fresh broccoli, chopped into smaller bite-size pieces
- 1 small onion (red or white), finely diced (about 1/3 C.)
- 1/2 C. shredded cheddar cheese
- 1/4 C. slivered almonds, lightly toasted
- Optional: 1/2 C. raisins, 1/2 C. sunflower seeds, 1/4 C. diced red bell pepper and/or 4-5 slices bacon, cooked and crumbled
Instructions
- Combine the honey, mayonnaise and balsamic vinegar in a small bowl until well incorporated (you may need to heat the honey first for a few seconds in the microwave).
- In a large bowl, combine the remainder of the items (including any optional items you are including) and toss together.
- Carefully stir the dressing into the salad ingredients making sure the broccoli is evenly coated.
- Place the salad in the refrigerator to chill for at least 30-40 minutes before serving (the longer the better).
- Before serving, remember to give the salad a quick stir to redistribute the dressing.
