Strawberry Chicken Salad is a wonderful, no-cook option thrown together in just minutes and made into a meal! Delicious and fuss free!
As we move from spring into the early stages of summer, the heat starts to crank up considerably. I’m not sure what the weather is like in your neck of the woods, but here in Phoenix it’s one word: HOT.
This scorching summer heat started a few weeks ago and believe me.. I would have been excited had she waited a little longer to arrive. With temps pushing triple digits, finding a way to whip up meals and keep the house cool is a struggle.
Strawberry Chicken Salad
This Strawberry Chicken Salad is super easy to throw together and always loved by all.
Start with a few chopped celery stalks, and 1/2 C. onions, and combine with chicken, and miracle whip (or mayo). Make it quick and easy by using canned chunk chicken, or use your Instant Pot to cook some boneless, skinless chicken breasts.
Once all the ingredients are combined, stir in 1/2 C. strawberries and serve atop of your favorite croissants, or variety of bread. Refrigerate any leftovers and consume within 48-72 hours.

Strawberry Chicken Salad
Ingredients
- 2 celery stalks chopped
- 1/2 C strawberries chopped
- 1/2 C onions chopped
- 12.5 can chunk chicken breast or 1.5 C cooked chicken
- 1/2 C Miracle Whip
- 2 avocados
- 4 croissants or bread of choice
Instructions
- In a medium bowl combine the celery, strawberries, onions, and chicken.
- Add in the Miracle Whip dressing and stir until all is combined.
- Let chill and when ready to serve spoon onto croissants and top with sliced avocado.
