These spicy pickled celery sticks are quick and simple to make and delicious to snack on, use in your favorite recipe or serve as a side!
Cucumbers undoubtedly have more fun than most of the other garden veggies – after all, they make great pickles. But why should cucumbers have all the fun when there are a lot of other garden veggies?
Celery sticks make incredible pickles as well. You can use these spicy pickled celery sticks in salads (potato salad), appetizer plates, on sandwiches or along side your favorite wings.
Spicy Pickled Celery Sticks
These pickled celery sticks are oh-so spicy, but also very tasty. They get their spice from the chili flakes and mustard seed and are relatively simple to whip up. Combine the vinegar with the sugar over low heat until dissolved, and then add salt, mustard seeds, chili flakes and peppercorns and let simmer for 5-7 minutes.
While that brine simmers, peel and cut your spicy pickled celery sticks into smaller pieces about 4-5 inches in length. Shove them in your wide mouth canning jar along with the smashed garlic cloves.
Pour the brine over the contents of the jar, making sure that all the pieces are submerged in the brine. Top the jar with a canning lid and ring (or a plastic lid for wide-mouth jars). Allow the jar to cool completely before serving.
*As the pickles are cooling, you might want to shake the jar occasionally to distribute the spices.
Spicy Pickled Celery Sticks
Ingredients
- 2 C white vinegar
- 1/3 C sugar
- 1 Tbsp salt
- 3 ea garlic cloves smahed
- 1 Tbsp mustard seeds
- 1 tsp red chili flakes
- 1 Tbsp black peppercorns
- 8 ea celery stalks peeled and cut into pieces
Instructions
- Bring the vinegar, sugar and salt to a boil in a small saucepan until the sugar and salt are dissolved.
- Add the mustard seed, chili flakes and peppercorns and simmer an additional 5-7 minutes.
- Cut the celery stalks into 4-5" pieces and pack into the jar along with the garlic.
- Pour the vinegar brine over the contents of the jar, make sure all of the pieces are submerged in the brine. Cover the jar and allow to cool completely before refrigerating.
- As the spicy celery stalks cool, you may have to shake the jar to distribute the spices and brine.

For the first time, I grew celery in my garden. Growing great—got LOTS! (So flavorful compared to store bought.) I looked for a quick pickled recipe and ran across yours. Wasn’t sure how much it would make. I followed the recipe … it took one “head” of celery out of the garden cut up. It made 2 pint canning jars perfectly.

Can the spicy pickled celery sticks be put in a water bath for canning for future use?
Definitely can, I didn’t do that, but you may want to run it by Ball canning just to ensure it’s safe for canning. Should be fine to do that though!
