This sourdough Irish Soda Bread is a great way to use up your sourdough starter or discard, and is perfect with your St. Patrick’s Day dinner!

Sourdough Irish Soda Bread

Soda bread is one of the biggest staples around St. Patrick’s Day. Next to Corned Beef (yum!!!) it is a must to serve up at the dinner table.

I’ve always loved Irish Soda Bread but this time I threw up some variation. This time its chock full of Harvest Grains blend with a touch of sourdough. Since I love caraway seeds I also threw some in there as well. It smells heavenly!

Tips for Baking

  • Don’t have any starter? Here’s a recipe for sourdough starter with flour and water. You’ll need to allow yourself as much as a week to get started with this sourdough starter. That week will give you time to feed it and prepare it for use. Or, bookmark this wild grape sourdough starter which is ready much faster than a typical starter.
  • If you don’t have premium whole wheat flour, feel free to use all purpose flour in this recipe.
  • The dough will be dry and crumbly — you might need to adjust the liquid by adding an additional 3-4 Tbsp of raw milk or a smidge more sourdough starter to allow the dough to come together.
  • Don’t have Harvest Grains blend? Don’t panic – you can substitute any combination of ground flax, sesame seeds, sunflower seeds, poppy seeds and even ground oats.

Sourdough Irish Soda Bread

To make this bread, add all of your ingredients to your mixer and mix just until combined. The dough will struggle to come together, therefore you might need to add additional milk or sourdough starter. (Not too much but just enough).

Turn out onto a lightly floured surface and knead for a minute or two. Shape into a round ball and slash the top with a knife to allow the loaf to expand.

Place the loaf in your preheated Dutch oven and top with the lid. Bake for 20 minutes at 400 degrees F. Then remove the lid and continue to bake for an additional 20 minutes.

Allow the bread to sit and cool for a few hours before slicing into it.  Enjoy your Irish Soda Bread slathered with plenty of butter!

Ingredients

  • 2.5 C whole wheat flour
  • 1.25 C all purpose flour
  • 1/2 C Harvest Grains Blend see below
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 C sourdough starter ripe, fed or discard
  • 1/4 C butter melted
  • 3 Tbsp honey
  • 3/4 C milk or more, as needed

Instructions

  • Preheat your oven to 400 degrees F. Place your Dutch oven with lid in your oven to preheat along with the oven.
  • In your KitchenAid, mix the flour, harvest grains blend, baking soda and salt.
  • Make a well in the center and add the starter, butter, honey and milk. Pour the mixture into the dry ingredients and use your dough hook to mix just until combined. The mixture will be stiff. If it is still too crumbly, add another Tablespoon or two of milk or sourdough starter.
  • Turn the dough out on the counter. Knead it several times to make sure it comes together. Shape it into a round loaf. Slash the top diagonally to make two incisions.
  • Remove the Dutch oven from your preheated oven. Place the loaf on parchment and gently lift into your Dutch oven. Place the lid back on the Dutch oven and bake at 400 degrees for 20 minutes. Remove the lid and continue to bake at 400 degrees F for an additional 20 minutes until a toothpick inserted in the center comes out clean.
  • Brush the top of the loaf with melted butter, if desired.
