Delicious Strawberry Lemon Popsicles, made with just four simple ingredients in 5 minutes or less – the perfect way to welcome summer!

Let’s say hello to the onset of summer and hello to loads and loads of popsicles! ☀️☀️

If you have kids, chances are, they beg for popsicles. I know mine do, and I have one child that is always eager to come up with new popsicle combinations that we can potentially make at home. Now that I think about it, I might have a foodie on my hands here 😆😉

I love making my own popsicles at home… to be able to throw together some fun, delicious ingredients and turn them into beautiful works of art is soul satisfying, for sure.

These strawberry lemon popsicles are super easy to make and might I say they are SO DARN GOOD!

Simply combine the ingredients, blend until smooth, and pour in your mold. I’ve been using this upright molds for years, but recently I opted for a flat, silicone mold and I’m loving it a bit better than the upright. I find myself swapping back and forth depending on how I feel for the day.

I picked up my flat mold at my local grocer – but you can find several similar varieties on Amazon. It’s much easier to get the popsicles out of the flat mold than the upright mold, and they seem to freeze quicker, too.

Are homemade popsicles a savings?

Compared to picking up popsicles in the store, you really do save quite a bit over time making popsicles at home. Not to mention, when you can involve your kids, you teach them math, creativity and independence at the same time. Win win 🙌

STRAWBERRY LEMON POPSICLES

These popsicles come together SO quickly with just a few simple ingredients:

  • strawberries, stem removed
  • juice of two lemons
  • water
  • and agave nectar (feel free to swap this out with honey*)

*Using honey will not result in these being vegan!

Blend these four ingredients until smooth and pour in your favorite popsicle mold.  Allow them to chill in the freezer for at least six hours if not overnight.

Then remove from the freezer and gently pop out of the mold to enjoy.

Ingredients

  • 1 lb fresh strawberries stem removed
  • 2 lemons juiced
  • 1 C water
  • 1/4 C agave nectar

Instructions

  • Remove the crowns from the strawberries and wash them.
  • In a blender, add the strawberries, water, lemon juice and agave nectar. Blend until smooth.
  • Pour in popsicle molds and put the popsicle sticks in place. Freeze for 6 hours or more prior to unmolding.
