Dehydrated Green Chile Powder Recipe

Add a flavorful kick to any dish with this spicy dehydrated green chile powder that you can make easily at home with your garden bounty  of fresh green chiles.

It may come as a shock to many, but making your own chile powder really is a real thing.  It has a flavor that far outrivals its red chile counterparts.

While you can buy it in packages online, it’s actually  very simple to make yourself and quite affordable,  too.  You can use any type  of green chiles, from anaheim to jalapeño. All it takes is a dehydrator and a few hours, or dry them over the course of a few days where you have some sun.

Drying Green Chiles

Any amount of green chiles can be used for making green chile powder, but it certainly does take a considerable amount of  fresh green chiles to get a few ounces of powder.

Get started by  removing the stems and seeds of the green chiles and slicing them into thin strips or small pieces. Simply place them on your dehydrator trays, making sure they are well-spaced.

Green Chiles

Set your dehydrator on 125 degrees F and dehydrate the chiles for 10-12 hours. The chiles should be hard and brittle when they are completely dry. If  you need additional time, then go another hour.

Once they are Dry

Once your green chiles are dry, place them in a spice grinder that you use exclusively for spices. Be careful not to overfill  your grinder —  you may have to do two batches. Grind until the chiles are a fine powder, then funnel into a clean spice jar.

Use the finished  green chile powder as you would regular spices. You can use as a rub for meat, as a flavor enhancer in soups or sauces or added to yogurt cheese for a spicy kick.

Dehydrated Green Chile Powder

This chile powder is different from red chile powder in fact that it doesn’t impart as much of a color as red chile.  It has more of an earthy flavor than other red chile powders – like chipotle. While chipotle chile powder has more of a roasted, smoky  flavor, green chile powder does not. Not to mention that the color is much more muted.

I love using chile powder as a rub for pork loin and chicken.  It’s especially great when you turn and use that pork in homemade posole. It’s so delicious!

Ingredients

  • 12-15 fresh green chiles Anaheim, stem and seeds removed

Instructions

  • Cut the green chiles into smaller pieces and lay them on the dehydrator trays.
  • Ensure that the green chiles aren't touching each other on the trays and that there is ample space between each piece.
  • Dehydrate at 125 degrees F for 10-12 hours or until completely dry, adding more time as needed.
  • Grind them using a spice grinder until they are a fine powder.
  • If you are without a dehydrator, lay the pieces on a baking sheet in a sunny space for 4-5 days or until dry.
  • Grind them using a spice grinder until they are a fine powder.
  • Store in a tightly covered spice jar in a cool, dry place.

    I used hatch xtra hot green chilis to make mine . It has a nice flavorful kick to it for rubs, salsas, in soups. It goes almost with anything . I make a green chili sauce for my Burros that is fantastic
