Chocolate covered coffee beans are the perfect pick me up. Not only are they easy to make, they’re keto-friendly as well – whip them up with just 2 simple ingredients.

Making your own chocolate covered coffee beans is literally easy as pie.. just two ingredients and a little time. You’ll not only save money, but you’ll have a really yummy snack when you’re craving something sweet.

Why would chocolate covered coffee beans be a Keto-friendly snack? It all comes down to the chocolate chips.  Lily’s chocolate chips are sweetened by stevia, with no added sugar. They are low carb, keto friendly, non-GMO and gluten-free.

You can find them at your local Target, Kroger (Fry’s), Walmart — I have heard that Target has them, too.

Chocolate Covered Coffee Beans — Ingredients

Two ingredients – that’s basically all you need to make these incredibly addictive nuggets of gold. Head to your local grocery store and pick up:

  • Coffee beans
  • Lily’s Chocolate Chips
  • Sea salt (optional

That’s it! If you aren’t looking for anything Keto-friendly, then any chocolate chips will work. As for the sea salt — that’s completely optional!

How to Make Chocolate Covered Coffee Beans

Making chocolate covered coffee beans is super simple – so grab your ingredients (just 2!) and get started But, before you lay out those ingredients, take a minute to lay some parchment paper on a cookie sheet.

This will prevented your coated chocolate coffee beans from sticking to the pan.

Now, you’ll want to melt down your chocolate. Place your chocolate chips in a microwave-safe dish and heat 20 seconds at a time. Stir the chips after each heating. (Don’t want to use the microwave? You can use a double broiler if you prefer).

Add the Coffee Beans and Spread Out on Parchment

When fully melted, use a fork to dip the beans in the chocolate. Make sure they are fully coated. Allow most of the chocolate to drip off.

Place the coated bean on wax paper or a silicone mat. Allow to slightly cool before adding a pinch of salt to the top.

You want the chocolate to be cool so the salt stays in chunks but not so much that the salt does not stick to the chocolate.

Place in the fridge for 30 minutes if not overnight until the chocolate is set up. Then enjoy this yummy, rich snack!

How to Store Chocolate Covered Coffee Beans

To store these beans and keep them as fresh as possible, place them in an airtight container. An airtight container will ensure that the chocolate stays hardened.

You can keep them on the counter at room temperature in an airtight container, but they may not stay as fresh. I have found that when I keep them out at room temp, the chocolate tends to sweat and the beans start to stick together.

How Much is One Serving?

One serving size will depend on what you feel comfortable eating in one sitting.

Generally speaking, you probably don’t want to go over 400 mg caffeine in one day (so try to stick to 40 beans a snack – and that will vary depending on what your bean caffeine content is).
