Simple honey garlic chicken drumsticks that are easy to put together with 4 simple ingredients for drumsticks that are finger-lickin’ good!!
Sometimes the best recipes come together when you least expect – agree?
Having a really good go-to chicken drumstick recipe is a must. Especially on those days that you want something that’s truly easy to throw together.
Maybe the kids have sports and you get back home late, or if your spouse asks you to make something different for his lunch the next day.
You know.. so he can take his own lunch to work.
Who am I to say no? Chicken drumsticks are easy to thaw out – and with a few simple additions, they can truly be the easiest throw-together dinner that everyone will love.
Serve up your chicken with something easy like Instant Pot rice. I love to throw 10-15 Idaho Potatoes in the Instant Pot every week and keep them in the fridge for fast dinners.
After 10 minutes on high pressure in the Instant Pot, I’ll let them cool down, then put in the fridge. They are easy to transform into something simple after that.
In this case, I pulled them out and used a wavy cutter to cut waffle potatoes to cook alongside the chicken.
Baked Honey Garlic Chicken Drumsticks
When you make this recipe for baked honey garlic chicken, you will want to put up a foil divider in your baking pan. The closer you keep them together, the better they’ll cook.
Fold up the sides of your foil around the chicken to keep those juices in; if you are making potatoes, throw them on the other side of the pan.
Drizzle those potatoes with oil, sprinkle with seasonings and they can all bake together.
You’ve definitely gotta love a finger-lickin good drumstick that’s crispy and slathered in a sweet, honey garlic sauce.
Drumsticks are one of my favorite go-to meals. They are easy to season, simple to bake, and delicious to eat. They can be slathered in a kicked up candied jalapeno barbecue sauce or a simple homemade barbecue sauce that’ll please anyone – even the smallest.
Plus, this recipe is so easy (we’re talking SIMPLE ingredients!) you will want to make it over, and over, and over again.
OK… I might be exaggerating but they really are that good!
Recipe Notes:
#1: I love serving this chicken with smashed potatoes or, waffle cut baked potatoes. For waffle cut baked potatoes, I cook 10-12 yellow potatoes in my Instant Pot for 10 minutes at high pressure. I remove, and store in the fridge. When I have the opportunity to pull an easy side (like this Chicken main dish), I use my wavy cutter to cut the potatoes, toss with a bit of olive oil and sprinkle with salt and cracked pepper. They bake up in the same 9×13 as the chicken – just make sure you turn the edges up on the foil to “shield” them from the potatoes.
#2 You can easily sub yellow mustard for the dijon – though I wouldn’t sub spicy mustard.
#3: The corn flour is necessary — it helps absorb the juices and makes the honey garlic sauce a little thicker. You could also use regular flour (if desired). Make sure you look for organic corn flour.
#4: Sauce will thicken considerably after removing the chicken from the oven. If you wish to have a thicker sauce, up the honey in the recipe to 1/3 C.
#5: Chicken drumsticks can be reheated easily in the oven or microwave.
I certainly hope you enjoy this chicken as much as I do!
Ingredients
- 4 cloves garlic, minced
- 1 Tbsp dijon mustard
- 1/4 C. honey
- 2 lbs chicken drumsticks
- cracked pepper and salt, as needed
Instructions
- Preheat the oven to 350 degrees F.
- Generously grease a 9x13 baking pan or a 4-rimmed baking sheet. If desired, pull a length sheet of aluminum foil and turn up the sides to make a rimmed rectangular dish.
- Pull the skin down on the chicken (the outer skin) so that the skin covers the meat underneath. Place the chicken on the pan, alternating down and up so they fit nicely together. You want them to be packed as tight as possible.
- Whisk the honey, mustard and garlic together and drizzle/brush half of the mixture on the chicken. Sprinkle with pepper and salt.
- Bake at 350 degrees F for 30 minutes. Remove the chicken; flip over, and re-dress the other side with the honey/garlic mixture. Top with cracked pepper and salt.
- Bake for an additional 15 minutes at 350 degrees F. Once done, re-dress with the glaze from the pan. Top with chopped parsley.
