A simple yet delicious sourdough pizza crust that requires just four simple ingredients and bakes up perfectly every time!
I’m always looking for ways to use up my sourdough starter and sourdough discard – and this sourdough pizza is one of my favorites.
If you make sourdough bread regularly, I’m more than certain you have discard. At first… I’ll admit, the discard was just that – discard. Tossed and never thought of twice.
But then as time went on, I discovered that discard was one of my favorite parts of keeping a sourdough starter. My starter is named “Sid” — and he definitely earns his keep. This pizza crust is by far one of my favorites.. not too thick, but not too thin. Perfect enough to pile your favorite toppings onto and still comes out perfect every time.
Since then this discard has been used for a variety of favorites:
- Sourdough Crackers
- Delicious Sourdough Banana Bread
- And Sourdough Popovers
Sourdough Pizza Crust
I think we can all agree that pizza is pretty fantastic. But when you can use your sourdough starter to make this delicious pizza dough… well, that just makes pizza night even better!
So before you feed your sourdough starter, discard a small amount. Keep the discard in a glass jar and store it in the fridge. Once you have enough discard, use it to make a this sourdough pizza crust.
This recipe makes one large pizza. Or double the recipe to make multiple pizzas. You’ll mix it up, press it out, and bake for a quick 7 minutes. Then brush lightly with olive oil, add your sauce and toppings, and bake for an additional 5-7 minutes or until cheese is melted.
The result is a crust that’s a toss between a thin crust and an original hand-tossed pizza.
Sourdough Pizza Crust
Ingredients
Pizza dough:
- 1.5 C sourdough starter fed or unfed
- 1 Tbsp olive oil
- 1 tsp salt
- 1.5 C all purpose flour more or less as needed
Additional ingredients:
- 1 Tbsp olive oil
Instructions
- Preheat your oven to 500 degrees F.
- Mix the starter, olive oil, salt and flour in your KitchenAid (or by hand) until it forms a ball. You might need to add additional flour or sourdough starter to adjust the consistency.
- Allow the dough to rest for 5 minutes. During that time, take a small amount of olive oil and grease the pizza pan completely.
- Roll or press out the dough on the pizza pan. Bake for 7 minutes then remove from oven.
- Use a pastry brush to brush the baked crust with 1 Tbsp of olive oil (this helps keep moisture out of the crust as it bakes). Then, top as desired with sauce, cheese and additional items.
- Cook for 5-6 additional minutes or as needed, until cheese has melted.

I’m about to make this pizza dough recipe but noticed it does not specify the amount of water needed.
Please Help ! ( had great success with your sourdough bagel recipe)

Hi Sonia — I did not use water! Just the ingredients listed. If the dough seems dry, add a bit more starter. I roll mine out very thin and bake for a few min before adding toppings. We love it!
