Skinny Banana Chocolate Chip Muffins

Muffins are a fun and exciting snack for our kids – not only do they love to take them in their lunchbox, they love having them here at home for snacks, too.

We make all kinds of muffins – from Carrot Ginger to Zucchini… Oatmeal Chocolate Chip & more. No matter what’s in them, they love them. And although they are done with school for this past school year, now that they are home all summer it’s important to have something for them to snack on.

But…. we try so hard to cut back sugar on bread recipes and thankfully this one works well doing that.  These are very rich muffins, but you would never know that they are so light on ingredients.   Not only do they have loads of bananas, they use honey in lieu of sugar… and whey to keep them moist (if you don’t have whey from making your own yogurt then you can use buttermilk or even greek yogurt!)

We also used a little whole wheat flour to pack a little more punch in the nutrition department.

These are seriously SO easy to make – pull out your Mini Muffin Pan if you don’t have one, because they work perfect for the kids.

A delicious snack for kids at home, or for their lunchbox - a healthy banana muffin with a few chocolate chips, using honey as sweetener instead of sugar.

Ingredients
  1. 1 C. Organic All Purpose, Unbleached Flour
  2. 1/2 C. Organic Whole Wheat Flour
  3. 3 Bananas
  4. 1/4 C. Raw Honey
  5. 1 tsp Vanilla
  6. 1 Egg
  7. 1 Tbsp Coconut Oil
  8. 1tsp Baking Soda
  9. 1/2 C. Whey (or, Buttermilk) --(or, 1/2 C. Milk + the juice of a lemon)
  10. 1 Tbsp Raw Milk
  11. 1/3 C. Chocolate Chips (save some to place on the top of each before baking)
Instructions
  1. Preheat the oven to 350 degrees.
  2. Spray your mini muffin pan (or, use liners if you wish).
  3. Mix the bananas, honey, vanilla, egg, oil, milk and buttermilk and blend on high until combined.
  4. Stir in the dry ingredients (flour, baking soda).
  5. Fold in the chocolate chips, reserving 2-3 chips for the top of each muffin.
  6. Divide the batter evenly into the tins and bake for 15-20 minutes or until they are brown.
  7. Cool for 10 minutes and then remove and transfer to a wire rack or, your counter to finish cooling.
  8. Muffins are super when eaten still warm - or cover and heat up the next day.
