It’s that time of the year when cabbage is in season here in Arizona, and if you are part of a CSA, you are probably getting beautiful, bold-colored heads of red cabbage. I have been getting red cabbage for the last few weeks.
It’s exciting to have a beautiful head of cabbage in the fridge ~ while many miht just make a cabbage salad as a side dish for dinner, I much prefer my cabbage cooked and this Sweet and Sour Cabbage totally hits the spot.
Not only is it an easy side, it’s so versatile ~ you can eat it as is next to your main dish or… you can do what I do and dump cabbage on top of your baked potato with a little butter. Oh good heavens, the deep purple color is so gorgeous – it’s almost too beautiful to eat!
I have always said that colors fare well with my kids ~ the more colorful the food, they more likely they are to eat it. This was no different… my oldest thinks that purple cabbage is just as fun as purple potatoes. You can’t help but get excited when someone sets this sweet and sour cabbage down in front of you, after all, it’s colorful.
The Instant Pot is the perfect device to cook up this side ~ it takes just minutes, and requires minimal work.

Ingredients
- 1 Tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 C.minced onion
- head (about 6 Cups) chopped cabbage
- 1 C. applesauce
- 1 C. water
- 1 Tbsp apple cider vinegar
- salt & pepper, to taste
Instructions
- Add the oil, onion and garlic in the Instant Pot and use the saute setting to saute the onion and garlic until they are transparent, 1-2 minutes.
- Tun the saute function off, and add the cabbage, water, applesauce and apple cider vinegar.
- Put the lid on the Instant Pot and seal the valve.
- Push manual (high) and for 10 minutes.
- Once done, allow the pressure to release naturally for 5 minutes, then do a quick release.
- Season with salt/pepper, and serve.
