I LOVE stuffed peppers – but I won’t lie… sometimes I don’t have time to put them together. Even though they can be made with minimal ingredients, it’s much easier to dump everything in a pot and push a button than have to assemble and turn on the oven.

Not to mention, every time I push bake on my oven, my house heats up to VERY high temps. 

I’ll drag the floor fan in the kitchen and lower the AC just to cool down the house, but it’s crazy – that kitchen of mine retains heat so well that the heat gets trapped and then I’m baking the rest of the day.

So any opportunity to avoid turning on the oven.. I’m all in.

If you have an Instant Pot like I do, you’re probably always looking for soups and meals to make for your family. Stuffed Pepper Soup is a crock pot favorite – but it can be made so much faster in the Instant Pot – have I mentioned to you that the Instant Pot has a Slow Cooker function?

Which means you can toss out those crock pots… Ok, well maybe you should put them in the garage instead of “toss” .. but you know what I mean 😉

We sliced up the peppers (you can dice, but I was too lazy to do that..), threw in onions and tomatoes, ground beef, and some spices and rice, and pushed two buttons.  That’s it – two buttons. It was done 25 minutes later. I love that!   Not to mention my house stayed cool through it all – and that’s appreciated, since I live in Arizona – it gets hot here!

This One Pot Stuffed Pepper Soup in the Instant Pot is a quick one-pot meal that you can whip up in 30 minutes or less!

The wonderful blend of Stuffed Peppers in a fabulous, hearty, one-pot soup that cooks in less than 30 minutes!

Ingredients
  1. 1 Tbsp Extra Virgin Olive Oil
  2. 3-4 cloves Garlic, minced
  3. 1/2 Onion, thinly sliced
  4. 1/2 can Tomato Paste
  5. 1 tsp Cumin
  6. 1 tsp Chili Powder
  7. 1 tsp Black Pepper
  8. 1 tsp Salt (or, to taste)
  9. 2 Bell Peppers, any color, sliced or diced
  10. 1/2 - 1 lb. Ground Beef, uncooked
  11. 14.5 oz can Diced Tomatoes
  12. 5 C. Beef Broth
  13. 1 C. Organic Brown Rice, uncooked
  14. 3 Tbsp Cornmeal
  15. Parmesan Cheese, for garnish
  16. Green Onions, for garnish
Instructions
  1. In the Instant Pot, push Saute.
  2. Toss in the {uncooked} ground beef, garlic and onions until ground beef is cooked through and onions are clear.
  3. Push OFF to turn off the Saute function.
  4. Stir the tomato paste in with the ground beef, then add cumin, black pepper and salt along with the peppers, diced tomatoes, and beef broth. Mix well so it's all combined.
  5. Pour the rice in, and mix one last time until blended. Remember: the rice is uncooked at this point.
  6. Put the lid on the Instant Pot, clove the valve and push Manual (high), and bring the clock down to 23 minutes.
  7. Once the pot is done, it will beep - at that time, release the pressure, and push OFF to turn off the pot.
  8. Add the cornmeal little by little (if you do all at once it will clump!) - and stir well.
  9. Ladle into bowls and garnish with parmesan cheese.
  10. Serve with fresh dinner rolls or breadsticks.
