Just last week, we were lucky enough to pick up extra Kale from our co-op – although we got one bunch in our bag, we got there a little late to pick up and they had extra Kale leftover…
They asked me if I wanted and I didn’t want to turn it down – who would? It’s so easy to throw in Soup, chop up and put in breadsticks. And honestly, chopping it up in breadsticks is a huge score with the kids.
They have no idea it’s even in there – win for mom! 🙂
These breadsticks are so easy to make – they are perfect to pair with pasta, or even soup – which is exactly how we ate them, with our Stuffed Pepper Soup we made in the Instant Pot.
When making these breadsticks, we didn’t quite use 3 Cups of flour – as you mix the bread together, take note of the feel of the dough – if you feel like it needs a little more flour then you can add a bit, otherwise we stayed between 2 1/2 and 2 3/4 C. and it worked out beautifully.
- 3 tsp Active Dry Yeast (or, 1 packet)
- 1 C. Warm Water (110 - 120 degrees F)
- 1 tsp Salt
- 1 C. Kale, chopped
- 2 Cloves of Garlic, minced
- 2 1/2 - 3 C. Flour*
- 1 Tbsp Extra Virgin Olive Oil
- 1-2 Tbsp Butter, melted
- In your KitchenAid, fit the hook attachment, and whisk the yeast with the warm water and let sit for 10 minutes until frothy on top. If you don't see foam on top then ditch the yeast and start again with a fresh batch.
- Add the salt, garlic, kale, and 2 cups of the flour and mix - at this point, add another 1/2 cup of flour and mix well once again.
- If the dough is still feeling a little moist, add flour only 1/4 cup at a time, you shouldn't need more than 3 cups.
- Turn out the dough to a lightly floured surface and knead for 4-5 minutes - transfer it to a bowl greased with a little olive oil and keep in a warm place to rise, about 1 hour.
- After the dough has doubled, or in about 1 hour, turn out the dough on a lightly floured surface and roll into a 9x13 rectangle.
- Use a pizza cutter to cut into strips - the amount of breadsticks you get will ultimately depend on how thick or thin you slice the dough.
- Pick up a strip, twist and place back down on a cookie sheet or a baking-mat lined cookie sheet.
- Let sit another 10-15 minutes, in the meantime, preheat the oven to 350 degrees F.
- After they have risen a second time (very short rise!), bake at 350 for 20 minutes or until golden brown.
- Brush finished breadsticks lightly with melted butter.
