Having a really GOOD go-to recipe that you can create in 20 minutes or less to feed hungry bellies on a busy night is AMAZING.
In a time when people will toss the opportunity to make dinner for their family aside in efforts to head to MOD pizza, or Rubio’s, eating at home can be so much better for your family. You control what goes in the food, and even better, you keep more money in your pocket.
Now obviously I have nothing against MOD pizza or Rubio’s, in fact, they are right down the street for us and so that’s what comes to mind before anything else 😉 Eating out occasionally is fine… but for a family of 7, it costs entirely way too much to eat somewhere.
If anything, that is money that can be used intentionally in other places where it will work much harder.
Onto this Chili Lime Chicken.
Good food is a big deal around our house – as our kids get bigger, they continue to show us that it is possible to eat a HUGE meal, and be hungry a mere 30 minutes later.
Tacos are one of their favorite things to eat, and there is nothing better to have on hand than shredded chicken that you can use for those tacos – or, for gorditas, burritos and more.
Yum!
This recipe starts with organic chicken thighs and breasts, and cooks them in a sea of chile lime spice, in addition to cumin, paprika, chili powder and more.
We may have even tossed some cinnamon in there for good measure – oh it’s pretty flavorful and I’m certain you will want to make this all the time.
The chicken cooks in just 15 minutes in our Instant Pot … an electric pressure cooker that we have had for almost 2 years. TWO years!

Ingredients
- 2 lbs chicken thighs and breasts, bone-in
- 1 Tbsp olive oil
- 5 cloves garlic, minced
- 2 Tbsp Tajin seasoning (or your own favorite chile lime seasoning)
- 2 tsp cumin
- 1 tsp paprika
- 1 1/2 tsp chili powder
- 1 tsp onion powder
- 1/2 tsp cinnamon
- 1/2 tsp black pepper
- juice of 2 limes
- 1 1/2 tsp salt, or more to taste
- 1/4 C. water
- 1/2 bunch cilantro, chopped
Instructions
- In the Instant Pot, push saute and saute the chicken with the oil, garlic and Tajin for 2-3 minutes until nicely seared.
- Turn the saute function off and add cumin, paprika, chili powder, onion powder, cinnamon, black pepper, lime juice and water.
- Place the lid on the Instant Pot and set the valve to seal. Push manual (high) and set the timer for 15 minutes.
- Once the time is up and the pot beeps, do a quick release and shred the chicken with two forks. Add salt to taste, and toss with cilantro before serving.
