Deliciously simple flourless oatmeal peanut butter cookies that come together quickly and easily with just 4 ingredients!
The last few weeks have been a crazy time for all of us.. Empty shelves at the market and a shortage of toilet paper have been enough to really scare some folks.
Right now, we all need to stick together and improvise as best as we can. Bartering has become a necessity for some of us (flour for soap…) and even still, some of us still can’t get our hands on flour.
I’m speaking from personal experience.
I never thought I’d see the day where I’d be completely out of flour, but here I am and I’m not sure when things will change. So for now, we’re doing everything we can to satisfy our cravings for sweets with what we have on hand.
Oatmeal and peanut butter. Bet you probably didn’t realize that such a simple list of ingredients could fashion something so delicious, did you?
Flourless Oatmeal Peanut Butter Cookies
These cookies really do hit the spot – with a nice, tall glass of milk. They are a great way to keep the kids happy as well, especially if you (like me) struggle to find flour, too. Let me tell you, I really wish I would have stocked up on flour months ago… but I regress. I’ve learned my lesson!
These cookies come together with simple ingredients – oats, peanut butter, one egg and a little cinnamon. Simply mix everything up, and then drop by rounded balls on your cookie sheet before baking. Within minutes you’ll have a delicious sweet cookie that will hopefully subside your cravings (while not requiring you have any flour!)

Flourless Oatmeal Peanut Butter Cookies
Ingredients
- 1 C oats
- 1/2 C peanut butter
- 1 egg
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees F. Line a cookie sheet with foil or parchment paper.
- In a medium bowl combine all ingredients and mix until well combined.
- Form into 2 inch balls and place on cookie sheet. With fork press the dough ball down.
- Bake at 350 degrees F for 11-13 minutes.

As a kid, I used to love the oatmeal cookies my mom used to make. I am not as gifted in the kitchen as her but this seems fairly easy and a great way for me to surprise my mother on her birthday next week. Thank you so much 🙂

You are so sweet! I, too, remember oatmeal cookies as a child… except it was at a friend of my parents. They have since passed obviously, but I still have the memories. These are fairly simple to make and my kids love them (plus.. I don’t have any flour right now and it seems as if I won’t be getting any for quite a while!)

Weren’t one bit sweet at all. Had to add frosting between cookies. Way too dry & can’t even taste the peanut butter. Change recipe so have a sweet taste.
