Coconut Flour Shortbread Cookies

A simple grain-free shortbread cookie with just 5 ingredients.

Chances are.. if you have kids, they are well aware of all the cookies and candies that surround the holidays. Although I don’t have any issues resisting sweets around this time of the year, my boys aren’t afraid to ask for them.

One of the biggest challenges we have is helping them stick to better foods – it’s so easy to get carried away at this time of the year.  We have been working really hard on keeping out refined sugar and limiting grains – not because we have any major health issues.. but because they have been dealing with some oral health care issues.

We know that grains are high in phytic acid, and phytic acid robs their little bodies of the nutrients they need for healthy teeth. When you have a diet high in grains and refined sugar, the enamel on the teeth are more prone to deterioration, and then decay set in..  since they are still on their baby teeth, I wanted to start them with good dietary habits now so that we don’t struggle with decay when they get their adult teeth.

These homemade herb crackers require 5 simple ingredients and are Vegan and gluten-free.I don’t want to deprive them of all sweets – so sometimes it’s nice to have something that they (and I) can enjoy without sacrificing their efforts towards their oral health regimen.

These cookies contain only 5 ingredients and are so fast to whip up ~ the recipe makes just 7 cookies. They are wonderful with a glass of milk.. even better with a mug of herbal coffee.

We added a little drizzle of chocolate on the top to make them extra good.

Ingredients
  1. 4 Tbsp butter
  2. 1 Tbsp maple syrup
  3. 1/4 tsp vanilla extract
  4. 1/3 C. coconut flour
  5. Optional: 1 Tbsp chocolate chips
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Place the butter, vanilla and maple syrup in the mixer and mix until well-combined, 2-3 minutes on medium/high.
  3. Add the coconut flour and continue to mix until a dough is created.
  4. Divide your dough into 7 amounts - roll each into a nice, smooth circle, and place on a foil lined baking sheet.
  5. Gently flatten each with the back of a fork.
  6. Bake for 6-7 minutes, watch them carefully so they don't brown.
  7. Allow them to cool for a few minutes - in the meantime, melt the chocolate chips at 50% power in the microwave and stir often.
  8. Put the chocolate chips in a ziploc bag, and cut the tip - drizzle the chocolate over the cookies.

    I substituted honey for the maple syrup and absolutely loved these cookies. So quick, easy, and delicious. I think they will make great strawberry shortcake. I plan to try this next with them.! Thank you for sharing the recipe.
