This No-Bake Mango Cheesecake is the perfect way to welcome warm weather and in-season mangos in an unexpected fusion of flavors and textures that promises a heavenly experience.
Wait – that might, just might, be an understatement!
This delicious cheesecake starts with crushed biscuits, enriched with melted butter to create the perfect 2-ingredient crust. The crust is then filled with a tropical filling—cream cheese, whipped cream, and mango puree.
A hint of zesty lemon juice adds a citrusy twist.
The cheesecake is then decorated with an artful swirl of mango pulp to create the most gorgeous and delicious masterpiece – requiring absolutely no oven time. Can you believe it’s just that easy?!
No-Bake Mango Cheesecake
This masterpiece comes together with a crushed cookie or biscuit base that can be created with:
- crushed biscuits
- crushed graham crackers (two packs would be adequate!)
- crushed vanilla sandwich cookies
- even crushed shortbread cookies
Combine the crushed cookies/biscuits with melted butter and press into your cheesecake pan. Chill in the refrigerator to allow the crust a little set up time while you work on creating the tropical mango filling.
The filling comes together quite easily with:
- cream cheese
- lemon juice
- pureed mango
- powdered sugar
- vanilla extract
- whipped cream
(Go a step further and pour a pint of heavy whipping cream to whip in your blender and whip until peaks form for an even more enriching filling.)
Top with sliced mango, lemon juice and granulated sugar for an added bonus. Allow four hours of chill time in lieu of oven time and you’ll have a dessert that’s bound to impress!

No-Bake Mango Cheesecake
Ingredients
For the Crust:
- 1.5 C biscuits crushed
- 1/3 C unsalted butter melted
For the Filling:
- 24 oz cream cheese softened
- 1 C powdered sugar
- 2 tsp vanilla extract
- 1.5 C mango puree
- 1 Tbsp lemon juice
- 1.5 C whipped cream
For the Topping:
- 1 C diced mango
- 2 Tbsp granulated sugar
- 1 Tbsp lemon juice
Instructions
For the Crust:
- In a medium mixing bowl, combine the digestive biscuit crumbs with the melted butter.
- Press the mixture into the base of a springform pan to create an even crust. Place it in the refrigerator to set while preparing the filling.
For the Filling:
- In a large mixing bowl, beat the cream cheese with a spatula to soften, until smooth.
- Add the powdered sugar and vanilla extract, beating until well combined.
- Mix in mango puree and lemon juice until the mixture is smooth.
- Gently fold in the whipped cream until the filling is light and airy. Pour the filling over the crust, spreading it evenly.
- Refrigerate for at least 4 hours or until set.
For the Topping:
- In a saucepan, combine the diced mango, sugar, and lemon juice.
- Cook over medium heat until the mango is softened, and the sugar is dissolved.
- Allow the mixture to cool before spreading it over the chilled cheesecake. Scatter the mango pieces over the cheesecake. Slice and serve.
