No-bake mascarpone cheesecake that’s easy to throw together with simple ingredients that result in the most delicious desert imaginable!
Who doesn’t love a delicious no-bake dessert? I have so many memories from when I was a child… growing up in rural Minnesota, and having family reunion and church picnics. My mom was always that lady who volunteered to bring fluffy marshmallow salad and a no-bake dessert.
She wasn’t anything close to a chef – but when we were kids we always thought she was the best cook. Now that I look back, I’d consider her the best “home chef” — and this mascarpone cheesecake is something she used to make all the time.
Thirty years later, this no-bake mascarpone cheesecake is one of my favorite things to make and bring to church events.
No Bake Mascarpone Cheesecake
It’s super easy to put together with just a few easy ingredients and a few hours of chill time. Go a step further and make your own mascarpone cheese at home to use in this no-bake mascarpone cheesecake.
How to make mascarpone cheese
You can even make your own cream cheese. Come on.. be adventurous!
If that’s not something you’d prefer to do, just pick up mascarpone and cream cheese at your local market.
This cheesecake is easy to throw together and chills over the course of 3 hours making it a wonderful option for any party or get together.
No Bake Mascarpone Cheesecake
Ingredients
- 15 oz graham crackers
- 7 oz butter melted
- 1 C heavy whipping cream
- 7 oz cream cheese
- 9 oz mascarpone
- 7 oz granulated sugar
- 1 tsp dried lemon ground
Instructions
- Put graham crackers in a large resealable plastic bag, and crush until very fine crumbs form.
- Pour crumbs into a bowl add butter, and stir until well combined. Press the crumb mixture into a round cake springform pan. Let chill.
- Put the liquid whipping cream into a large bowl and beat until stiff peaks form.
- In a large bowl mix the cream cheese, mascarpone, sugar and a ground dried lemon until combined.
- Pour the filling into the crust, smooth the top and refrigerate until firm, 2 1/2 to 3 hours.
- Unclasp sides of pan, and remove cheesecake to serve. Refrigerate leftovers and consume within 48 hours.
