Having a quick, and healthy breakfast for kids can be a wonderful thing – especially on those mornings that you can’t quite pull it together.

Like… every morning. Ha 😉

Really though, it’s not just handy when you have kids – it’s also handy or us adults, too! Certainly I love donuts and I could definitely go for one if you set it in front of me.

But in all reality, they aren’t good for the hips…. 

So until they are, I’ll stick with something healthier. Something with oats, perhaps chia seeds, maple syrup… toss in some blueberries – and you have these Blueberry Baked Oatmeal Cups.

 

Blueberry Baked Oatmeal Cups

These Blueberry Baked Oatmeal Cups are made with simple ingredients:

  • Chia seeds
  • Oats
  • Blueberries
  • Maple Syrup

Best part? They take just minutes to throw together. Use a muffin tin, well greased, or silicone muffin tin liners (I used these here).

Give them 18-20 minutes in the oven and bada boom — they are done! And you have a dozen – enough for a week. Or … two days (in my case…) – if you have a small army of kids. Ha 😉

Once cooked, enjoy immediately – or, refrigerate for up to 3 days. Though I will be honest – they’ll probably be gone before then because they are THAT good!

Blueberry Baked Oatmeal Cups

Blueberry Baked Oatmeal Cups combine simple, healthy ingredients into a quick and easy snack that's perfect for a quick breakfast!

Ingredients

  • 2 C old fashioned oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 Tbsp chia seeds
  • 2 eggs
  • 2/3 C milk
  • 1/2 C applesauce
  • 2 Tbsp maple syrup
  • 1 C blueberries

Instructions

  • In a mixing bowl combine the oats, baking powder, cinnamon, and chia seeds. Whisk to combine.
  • Add eggs, milk, applesauce, and maple syrup.
  • Use a wooden spoon or spatula to mix well until incorporated. Fold in the blueberries.
  • Spoon into greased cupcake pan or silicone cupcake liners.
  • Bake at 350 degrees F for 18-20 minutes or until golden brown.
  • Enjoy warm or let cool; refrigerate for up to 3 days.

  • Can enjoy warm or cold.
  • Can enjoy with syrup or as is.
  • Will freeze well. Can double batches for meal prep.
  • Can use milk of choice (almond or coconut milk would substitute well).
