Blueberry Baked Oatmeal Cups
Blueberry Baked Oatmeal Cups combine simple, healthy ingredients into a quick and easy snack that's perfect for a quick breakfast!

- 2 C old fashioned oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 Tbsp chia seeds
- 2 eggs
- 2/3 C milk
- 1/2 C applesauce
- 2 Tbsp maple syrup
- 1 C blueberries
In a mixing bowl combine the oats, baking powder, cinnamon, and chia seeds. Whisk to combine.
Add eggs, milk, applesauce, and maple syrup.
Use a wooden spoon or spatula to mix well until incorporated. Fold in the blueberries.
Spoon into greased cupcake pan or silicone cupcake liners.
Bake at 350 degrees F for 18-20 minutes or until golden brown.
Enjoy warm or let cool; refrigerate for up to 3 days.

- Can enjoy warm or cold.
- Can enjoy with syrup or as is.
- Will freeze well. Can double batches for meal prep.
- Can use milk of choice (almond or coconut milk would substitute well).
