Vegan Vanilla Overnight Oats – a simple recipe that’s healthy and easily prepared the night before – perfect for busy mornings!
Oats can be a lifesaver on busy mornings when you have lots of kids to feed and appointments to get to – or, maybe even work! One of the best ways to start the day on a good note is to be prepared.
Not only do oats cook up quickly on the stovetop for the traditional oatmeal we all love so much, but they work wonderful when used to whip up overnight oats, too.
Overnight oats are one of the best ways to start your morning healthy with minimal effort because you are preparing the oats the night prior. Half pint jars work beautiful for overnight oats for quick breakfasts that you can grab on the go once your feet hit the floor.
Vanilla Overnight Oats
These overnight oats come together quickly with such minimal effort – it will really transform how you start your day! To make the oats, combine:
- rolled oats
- maple syrup (or honey – whatever works for you!)
- vanilla soy milk (or alternative milk)
- your favorite fruit
The recipe below makes enough for 2 people – however, feel free to double and triple if you are feeding more hungry bellies!

Vanilla Overnight Oats
Equipment
- 2 half pint canning jars, lids and rings
Ingredients
- 1 C rolled oats
- 1 C vanilla soy milk or almond milk
- 1 Tbsp maple syrup or sub honey*
- 1 banana
- 1/4 C blueberries
- 1/4 C strawberries sliced
Instructions
- In a container add the oats and vanilla soy milk, mix well and close with a lid. Let sit in the fridge overnight.
- The next morning, divide the oats over 2 jars and layer your toppings.
