Brown sugar is a must-have in baking that shouldn’t ever be left out. No matter what you are making – from cookies to blueberry butter, if you find yourself out of brown sugar you can easily make your own at home with just two simple ingredients.
I love to bake – but every once in a while I’ll get deep into a recipe and find out that I’m completely out of brown sugar. While a quick trip to the store could very well solve the problem, sometimes I just don’t feel like hauling kids (especially when we are in the middle of a homeschool lesson).

What is Brown Sugar?
Brown sugar is a generic term for sugar that contains molasses. It’s that molasses that gives it the unique brown color and flavor. To make your own refined brown sugar, you simply need to add molasses back into refined white sugar (granulated sugar).
In brown sugar, it’s the amount of molasses that is added back in that determines the darkness of the sugar.
How to Make Brown Sugar
Making your own brown sugar at home is as simple as granulated sugar and a high quality molasses.
For Light Brown Sugar:
- Mix two tsp molasses with 1/2 C. granulated sugar (makes 1/2 C.)
- Mix 1 Tbsp molasses with 1 C. granulated sugar (makes 1 C.)
- Or 2 Tbsp molasses with 2 C. granulated sugar (makes 2 C.)
For Dark Brown Sugar:
- Mix 1 Tbsp molasses with 1/2 C. granulated sugar (makes 1/2 C.)
- Mix 2 Tbsp molasses with 1 C. granulated sugar (makes 1 C.)
- Or, mix 4 Tbsp molasses with 2 C. granulated sugar (makes 2 C.)
While you can simply add the molasses to the sugar in a bowl and stir, I think it’s easier to use the food processor. Add your ingredients in the bowl of the food processor and give it a whiz. You may have to stir down the sides (as the molasses will stick to the bowl).
After a series of whizzes you will have brown sugar in just a minute or two. Pour into a large ziploc bag or an airtight container to keep the sugar fresh.
How to Make Brown Sugar
Ingredients
- 1 C brown sugar
- 1 Tbsp molasses
Instructions
- Combine both ingredients in the bowl of your food processor.
- Use the pulse of the food processor to combine the ingredients over the next 30 seconds to one minute. Scrape down the sides as needed.
- See notes below for dark brown sugar or alternate measurements. Store the brown sugar in an airtight container or large ziploc bag to keep fresh.
