Watermelon Feta Salad

Watermelon is truly the quintessential summer fruit – it shows up at potlucks, picnics, and even Vacation Bible School. And very rarely is it ever turned down!

Kids left and right will grab watermelon and run off, faces plastered with juicy, red liquid as they eat all of the juicy watermelon straight from the rind…

Only to toss the rind and come back for repeated slices! 🍉🍉

Try as I might, I can’t ever cut a watermelon without stuffing tons of it in my mouth… and watching the juices hit the kitchen floor.

Only for me to ask myself, later on, why my kitchen floor is SO STICKY! 😆😄😉

Enough about that – lets focus on this salad! It’s healthy, quick, easy, and comes together with just 3 main ingredients (+ 1 optional ingredient!)

  • Dice up watermelon, toss it in a bowl
  • Add feta cheese to the bowl
  • Add purple onions to the bowl
  • Garnish with mint (optional) before serving…

And voila – a healthy, summer salad that will get rave reviews at your next potluck! Not only that, it will help you put to use watermelon that you pick up on sale at your supermarket or grow in your backyard garden.

Ingredients

  • 1 ea small seedless watermelon diced
  • 3 oz feta cheese 1/2 of a regular tub
  • 1/2 red onion sliced thin

Optional:

  • 3 Tbsp fresh mint leaves finely chopped

Instructions

  • Combine the watermelon, feta and onion and toss together in a large bowl or container.
  • Refrigerate until ready to serve.
  • Garnish with mint when serving, as desired (optional).
