Gingerbread Breakfast Loaf

Although we’re not in the holiday season just yet, it won’t be long before we are… we’re creeping up on August, and usually at that point decorations are creeping up in stores citywide.

And while it might be a little too early to think about Christmas now in July… it’s not too early to plan ahead. This recipe is great for the holidays – when people drop in unexpectedly, it’s always nice to have something yummy to serve up that’s filling and that doesn’t require too much effort.

What’s even better, is this recipe can sit overnight and bake the next morning – or, you can opt to throw it in the oven after letting it rest for 20 minutes. Either way.. it comes out fabulous.

Gingerbread Breakfast Loaf

Many people will stop at Coffee shops like Starbucks for bread similar to this – and I don’t know about you, but if you have kids (we have 5..), it’s much more effort to buckle belts and load kids in the car than to just make the bread yourself at home.

Not to mention the savings!

Take your kids into Starbucks and you are guaranteed to come out with not one, not two, but a kids chocolate milk with whip cream for everyone… $15 later, you are finding yourself shaking your head.

And don’t even attempt to drive through their window and order from the car — if your kids are like mine, they know that means they don’t get anything and then the pity party starts. Oh joy 🙂

Ingredients
  1. 1/2 C. Sugar
  2. 2 Tbsp Butter (not margarine)
  3. 1 Egg
  4. 1 Tbsp Molasses
  5. 1 1/2 C. Milk (we used Raw)
  6. 3 C. Unbleached, Organic Unenriched Flour
  7. 1 Tbsp + 1 tsp Baking Powder
  8. 2 Tbsp Brown Sugar
  9. 1 Tbsp Cinnamon
  10. 1/2 tsp each Ginger, Cloves and Nutmeg
  11. (Or, alternatively, 2 drops of each Ginger Vitality Essential Oil, Clove Vitality Essential Oil and Nutmeg Essential Oil)
  12. Optional: 2 Tbsp Coconut Sugar or, 1/2 C. Chopped Walnuts
Instructions
  1. In your mixer, cream the sugar, butter, egg, molasses and milk.
  2. Add in flour, baking powder, brown sugar, cinnamon and spices just until moistened - if you are using Essential Oils, add them at this time instead of the spices.
  3. Pour into greased and lightly floured 9x5 baking dish.
  4. Preheat the oven to 350 degrees.
  5. You have the choice: top with walnuts, OR, sprinkle the coconut sugar on top (we did not do walnuts!)
  6. Let sit 20 minutes, then pop in the oven and bake for 50-55 min or until knife inserted in one of the cracks comes out clean.
  7. OR, alternatively, put the loaf pan in the fridge, and let sit overnight - in the morning, take it straight from the fridge and put in the preheated oven and bake (no need to bring it to room temp.)
  8. Let the loaf cool before slicing - it should keep for a few days as long as you cover it.... but it likely won't last that long.
