I reached into my pantry last week and pulled out two huge cans of water chestnuts. Definitely not something I remember putting in my pantry – but nonetheless, they had the intrigue of my children and led my 9 year old to want to use them to make this fabulous water chestnut dip.

After making this dip, and eating (probably) too much of it… I had to ask myself:  

Where in the world have water chestnuts been all my life?

And why am I JUST now eating them for the first time???!!

What are Water Chestnuts?

Water chestnuts are a vegetable – and they are high in water (approx. 74%!) which makes them a really great food to help move along things in your digestive system. In fact, they are high in fiber, and that’s a great thing for those of us trying to incorporate more fiber in our diet.

Fiber makes us more full, for longer periods and lessens the opportunity for us to reach for other snacks foods!

Eleocharis dulcis, the Chinese water chestnut or water chestnut, is a grass-like sedge native to Asia, tropical Africa, and Oceania. It is grown in many countries for its edible corms. The water chestnut is not a nut but rather an aquatic vegetable that grows in marshes, under water, in the mud.

Water Chestnut Dip

This dip combines very very simple ingredients that we all should have at home in our kitchen:

  • mayonnaise
  • sour cream
  • garlic powder
  • hot sauce (completely optional but I highly recommend!)
  • water chestnuts
  • diced onion

That’s it — simply julienne or finely dice those chestnuts (after rinsing them of course!) and add the ingredients to a big bowl. Cover and chill overnight, and then transfer to a serving dish. Finish by serving with crackers, or rounds… or veggies, too!

Ingredients

  • 1 C mayonnaise
  • 1 C sour cream
  • 16 oz canned water chestnuts drained, rinsed and finely julienned
  • 1/4 C onion finely chopped/diced
  • 1/2 tsp garlic powder
  • 1/2 tsp hot sauce completely optional

For serving:

  • vegetables
  • crackers, or cracker rounds
  • toasted bread

Instructions

  • Rinse and drain water chestnuts. Finely julienne, add to large bowl.
  • Add to the bowl the mayonnaise and sour cream, garlic powder, diced onion and optional hot sauce.
  • Cover and chill for at least one hour if not overnight.
  • Transfer to serving bowl and serve alongside crackers, toasted bread rounds or vegetables.
