A healthy pumpkin pecan bread that’s perfect for fall — chock full of everything from pumpkin and pecans, best served as an addition to your Thanksgiving meal!

Pumpkin bread is a fall staple in every home – at least I think it should be. Once August 1st hits, every home in America should have at least a half dozen cans of pumpkin – just to be able to make these amazing pumpkin recipes:

This recipe makes a single loaf of pumpkin pecan bread – should you wish to double, you’ll want to multiply the recipe in two and use 2 bread pans – preferably size 8×4.
Don’t forget to spray the pan with non-stick spray (or wipe out with butter) to prevent the bread from sticking. The spray/butter will help you remove the bread from the pan after it has fully cooled.


Healthy Pumpkin Pecan Bread
This healthy pumpkin pecan bread comes together in less than 10 minutes with really wholesome, healthy ingredients.
Start with whole wheat flour, pumpkin (either canned puree or make your own), molasses, a smidge of brown sugar, spices, and a single egg. Mix it up, then fold in the pecans (yum!) and pour into your favorite [greased] bread pan.
Bake at 375 degrees F for just 35 minutes – allow to cool before removing from the pan and cutting into slices. Enjoy served smothered with butter.

Healthy Pumpkin Pecan Bread
Ingredients
- 1.25 C whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/8 tsp sea salt
- 1 C pumpkin fresh or canned
- 1 egg
- 3 Tbsp molasses
- 2 Tbsp brown sugar
- 1 tsp vanilla
- 1/3 C pecan pieces
Instructions
- Preheat the oven to 375 degrees and spray 8” x 4” non-stick loaf pan with cooking spray.
- In a bowl, combine flour, baking powder, baking soda, cinnamon, pumpkin spice, and salt.
- In a separate bowl blend the pumpkin, egg, molasses, brown sugar, and vanilla, until the consistency is smooth.
- Pour pumpkin mixture over flour mixture and stir together. Fold in the pecan pieces.
- Pour in the pan and sprinkle with additional pecan and brown sugar if desired and bake for about 35 minutes.
- Cool completely on a rack before slicing.
