Cheesy Garlic Swiss Chard

Cheesy Garlic Swiss chard combines fragrant garlic with parmesan cheese for a delicious side dish that uses up a bounty of garden-grown chard!

Swiss chard has always been one of those veggies that grows so quickly and easily in my Arizona garden. Even with minimal effort, this veggie seems to take over and grow — almost to the point that it’s “jungle-like”.

Take for example this past fall… I lazily (and hastily) threw some chard seeds in my raised beds. One thing led to another and the chard seeds got scattered from the beds to points all over the backyard…

A month later, I had chard growing in pockets across my backyard. There was little to no irrigation at the time — every so often the sprinklers would pop up giving them a little ‘drink’ of water. But the chard kept going.. 

And going..

Before I knew it, my entire backyard was a jungle of swiss chard. I vowed to never just lazily toss seeds in my raised beds as I had a few months prior. But all in all, I was happy I did. Not only did it show me that I could garden better than I thought.. it also showed that despite harsh circumstances (weather, environment, etc), that chard was resilient enough to keep pushing forward.

It became a new way for me to look at things in my own personal life.

With an abundance of Swiss chard came every reason to find ways to use it – after all, that’s the whole point of gardening, right? To eat the bounty of your labor.

This cheesy garlic Swiss chard is a simple side dish to any main meal. It takes just minutes to throw together, and you can double or triple the recipe to feed a hungry family. My kids don’t particularly love chard, but they do enjoy cheesy garlic Swiss chard. This dish makes me feel like I’ve hit the jackpot in terms of feeding somewhat healthy food to my kids.

After all, it’s better than them chowing down French fries and soda, right?! (Unless it’s probiotic whey soda…)

Give this recipe for cheesy garlic Swiss chard a try and I’m more than certain you’ll love it as much as I do. Not only is it simple to make, it’s easily adaptable with your choice of chicken or vegetable broth.

Cheesy Garlic Swiss Chard

Ingredients

  • 2 Tbsp salted butter
  • 1 Tbsp olive oil
  • 1 Tbsp garlic minced
  • 1 bunch swiss chard coarsely chopped, stems included
  • 1/2 C broth chicken or vegetable
  • 1 Tbsp lemon juice
  • 1/3 C grated parmesan cheese

Instructions

  • Melt the butter and olive oil in a large skillet over medium-high heat. Stir in the garlic, and cook for approximately 30 seconds until fragrant. 
  • Add the broth and chard stems only, and cook about 5 minutes, or until the stems begin to soften. 
  • Stir in the chard leaves, and cook until wilted. 
  • Add the lemon juice to the skillet, and sprinkle with parmesan cheese. Stir well, and serve!
