Air Fryer Eggplant Pizza (with Oven Option)

Deliciously healthy Air Fryer Eggplant Pizza is a low carb alternative to regular pizza, made in the air fryer or oven in just minutes!

Air Fryer Eggplant Pizza Slices

Everyone loves a delicious slice of pizza. I know I’m a huge fan of pizza in all shapes and sizes — even pizza made with Cauliflower Crust or Lentils (yes, it is a thing!)

Just saying the word “pizza” makes my kids do the happy dance. However, the after-effects of pizza can be pretty heavy when you eat a little too much (which is not hard!) Pizza is one of the fastest ways to feel over-full and heavy for the rest of the afternoon – and it can zap you of every bit of energy you have left!

Air Fryer Eggplant Pizza Slices

Using eggplant to make pizza slices isn’t only a healthy option, it’s delicious! The air fryer is a wonderful way to put these air fryer pizza slices together. They are SO good!

Just slice your medium eggplant in slices about 1/3″ lengthwise – I was able to get 6 slices from one eggplant. Spoon on your marinara sauce (store bought or homemade!) and top with cheese/meat.

Then pop in your air fryer at 385 degrees F for 8 minutes and enjoy! Your eggplant pizza is not only delicious, but low-fat, and low-carb. If you’re on Weight Watchers, you can whip up these slices for 2.5 points a piece.

(Just make sure you read the notes at the bottom for my recommendations on substitutions you will want to make!)

Don’t have an Air Fryer? 

Feel free to use the oven! If you use your oven, you’ll want to bake the eggplant for 20 minutes. Then remove from the oven, top with cheese/meat, and pop back in the oven for 5 minutes.

Cook until you reach your desired doneness, or until the cheese begins to melt.

Then enjoy with your favorite tossed salad. You’ll love this healthy, low-carb alternative to regular pizza!

Air Fryer Eggplant Pizza Slices

Equipment

  • Air Fryer

Ingredients

  • 1 medium eggplant washed and sliced about 1/3 inch lengthwise (I got 6 slices)
  • 1/2 C marinara sauce
  • 1 C mozzarella cheese shredded*
  • 1/2 yellow pepper diced
  • 18 pepperoni slices or turkey pepperoni*
  • garlic powder
  • red pepper flakes

Instructions

Air Fryer Instructions:

  • Spoon marinara sauce over eggplant slices.
  • Add cheese, yellow pepper, and pepperoni.
  • Sprinkle with garlic powder and red pepper flakes.
  • Place on the Air Fryer tray or basket.
  • Air Fry for 8-10 minutes at 385 degrees.
  • Serve hot and enjoy.

Oven Instructions:

  • Preheat oven to 400 degrees F.
  • Place eggplant slices on a baking sheet.
  • Bake the eggplant at 400 degrees for about 15 minutes.
  • Remove from the oven and add sauce, cheese, peppers, garlic powder, and red pepper flakes.
  • Bake for another 5 minutes (until desired doneness is reached) or until the cheese is melted.

Notes

Weight Watchers notes:

These Air Fryer Eggplant Pizza Slices are just 2.5 points for those on Weight Watchers. Make the following substitutions:
  • Low fat mozzarella in lieu of regular fat mozzarella cheese.
  • Use turkey pepperoni in lieu of regular pepperoni slices.
