In a container add the oats and vanilla soy milk, mix well and close with a lid. Let sit in the fridge overnight.
The next morning, divide the oats over 2 jars and layer your toppings.

*Honey can be substituted for the maple syrup, however, the oats will no longer be vegan.You can eat this warm or cold. If you want the oats warm, microwave 30-60 seconds and then add toppings
