Pickle Salsa
Pickle Salsa - all the flavors of your favorite summer pickles, wrapped in a yummy salsa that can be coined as "pickle de Gallo". Perfect for summer!

1 cutting board
1 proper knife
- 2 English or Persian cucumbers sliced lengthwise, seeds scraped out, and finely diced
- 1 red bell pepper finely diced
- 1 sweet onion finely diced
- 2 cloves garlic peeled, finely minced
- 1/2 C pickle brine
- 1/2 tsp salt
- 4 whole pickles finely diced, about 1 C.,
Optional:
- 1/2 jalapeno pepper stem and seeds removed, finely diced
Toss your cucumbers, pepper, onions, garlic, hot pepper (optional) salt together.
Stir in the pickle brine and mix again.
Refrigerate for 1 hour - this allows the flavors to combine before enjoying.
