Mix the starter, olive oil, salt and flour in your KitchenAid (or by hand) until it forms a ball. You might need to add additional flour or sourdough starter to adjust the consistency.
Allow the dough to rest for 5 minutes. During that time, take a small amount of olive oil and grease the pizza pan completely.
Roll or press out the dough on the pizza pan. Bake for 7 minutes then remove from oven.
Use a pastry brush to brush the baked crust with 1 Tbsp of olive oil (this helps keep moisture out of the crust as it bakes). Then, top as desired with sauce, cheese and additional items.
Cook for 5-6 additional minutes or as needed, until cheese has melted.
