Love bread? I do too – Bread is one thing I could never cut out of my diet. In moderation… I think it’s fine. If you make it yourself, then that’s even better… because most of the varieties in the store are full of extra things you really don’t need.
Making it yourself – whether rolls, sourdough, or french bread, is just rewarding. And delicious. And it makes your house smell amazing!
This recipe is a great way to use up extra potatoes – I actually skin my potatoes and throw them in my Instant Pot, which steams them up in just 7-8 minutes.. It’s so much easier than boiling potatoes on the stove… which makes the house incredibly hot (especially now that Arizona summer is here…)
- 1 1/4 C. Mashed Potatoes
- 1 C. {Cooked} Potato Water
- 1 tsp Honey
- 2 1/4 tsp Active Dry Yeast
- 1 Egg, beaten
- 4 Tbsp Butter, room temp (+ additional for greasing the baking dish)
- 1 Tbsp Honey
- 4 1/4 C. All Purpose, Organic Unbleached Flour + a little extra
- 1 tsp Salt
- In your KitchenAid with the dough hook attachment, mix the potato water, honey and yeast - and allow 5-10 minutes for the yeast to proof (water should be 105 - 115 degrees F).
- Then, mix in the tablespoon honey, beaten egg, butter and mashed potatoes until combined.
- Add 4 1/4 C. flour and salt - just until blended. Knead in the blender for 8 minutes or until the dough pulls away (and is soft) -- use additional flour (1 Tbsp at a time) until the dough is smooth.
- Dump on lightly floured surface and knead 1-2 minutes. Then place in a buttered or oiled bowl and allow to rise until double in size (60-90 minutes).
- After rise, divide the dough into 16 equal pieces and form into a perfect ball.
- Place the rolls in a buttered 9x13 baking dish - leave a few inches in between each.
- Sprinkle with additional flour, and let rise until doubled in size - another 45 minutes to 1 hour.
- Bake in a 350 degree oven for 20 minutes or until brown.
- Serve with butter.
Can’t finish them all in a day? Just pop in a ziploc bag and put in the fridge. Reheat them in the microwave for 12-15 seconds per roll.
