Green Chile Mahi Mahi Fillets

If you don’t have a good Green Chile recipe, you can find one here on our blog – it’s amazing. It’s absolutely perfect for almost everything – Seafood, Chicken, Burritos — even Empanadas. YUM!  And so easy to make!

Mahi Mahi is one of those easy dinners too – especially if you have an Instant Pot!  We love our Instant Pot – 7 months later (we got it in Dec. 2015) it gets used day in, day out – and sometimes even multiple times a day.

It is an appliance worth investing in – it’ll make your dinner time meals entirely too easy.

This recipe is rather easy too – it’s best to start with Mahi Mahi fillets that are thawed – we knew we wanted them for dinner so we threw them from the freezer into a bowl of ice water and let them thaw on their own for an hour. It didn’t take long at all.. they were ready to go.

You’ll want to make sure you have this Homemade Enchilada Sauce on hand for this recipe too – ours is thick, and it sits on top of the seafood perfectly while it cooks up in the Instant Pot.

Ingredients
  1. 2 Mahi Mahi fillets, thawed
  2. 1/4 C. Homemade Enchilada Sauce (see link for the recipe)
  3. Salt & Pepper to taste
  4. 2 pats of Butter
Instructions
  1. In the Instant Pot, pour 1 C. of water, and set the steamer rack inside.
  2. Take the Mahi Mahi fillets, and on the bottom of each, use one pat of butter - this will prevent them from sticking to the trivet. Make sure you spread that pat from one end of the fillet to the other.
  3. Place the fillets on the trivet and prepare to spread the sauce on top.
  4. Spread the 1/4 C. of Homemade Enchilada Sauce between the tops of each fillet with a pastry brush. Make sure you cover them well (more is always better!)
  5. Salt & Pepper the fillets, then put the lid on the Instant Pot, lock and push Manual (High) for 5 minutes.
  6. Make sure the valve is closed and allow to steam. Once the pot beeps, release the pressure manually and remove the fillets.
Notes
  1. 5 minutes should be sufficient time provided your fillets are thawed - test, and if they don't seem quite done, just put the lid on for an additional minute.
