Have a lot of Sweet Potatoes to use up? They are a bargain at Costco – you can pick up a 5 or 10 lb Bag for just over $1 per pound. The last few months they had 10 lb bags, but this last two times I have been, I have seen only the 5 lb bags. So it might vary by store.
Sweet Potatoes are handy to have at home – it’s something we always have.. they steam up great in the Instant Pot (wash and scrub them and place in the Pot for 10-12 minutes on Manual). OR, for this recipe, we just used the last 2 HUGE ones in the bag.
We peeled them, cut into large chunks and then placed in the Instant Pot in a steamer rack on the insert for just 9 minutes. All while they were cooking we managed to make 2 dozen meatballs – one to freeze and one for meatballs that we made directly after.
This Sweet Potato Bread is delicious – we doubled the recipe, cut back on the sugar, and used Applesauce in place of some of the butter (1/2 and 1/2). If you double the recipe, there really is plenty for you to make a loaf (or two) AND a dozen muffins. Freeze up the muffins for the kids for school lunchboxes.
For an extra treat, add a few chocolate chips – but that’s definitely not “required” – it depends on what you prefer. If you would prefer to go a different route with your chocolate chips, you can make your own Chocolate Chips – it’s really easy.
- 1 1/4 C. Sugar (we used 1/2 C. Coconut Sugar and 3/4 C. regular White)
- 1 C. Butter (we used 1/2 Butter & Half Applesauce)
- 4 Eggs
- 3 1/2 C. Organic, Unbleached Flour
- 2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 3 drops Nutmeg Essential Oil
- 2/3 C. Water
- 2 C. Cooked and Mashed Sweet Potatoes
- Preheat oven to 350 degrees F.
- Combine the Butter, Eggs, and Sugar and blend well.
- Add in the Water, Sweet Potatoes, Cinnamon, Nutmeg, and Flour.. and mix just until blended.
- Lastly, add the Baking Soda and mix just until moistened.
- Pour into 2 well greased loaf pans, and bake 45-50 minutes or until a toothpick inserted in the center comes out clean.
So next time you have an abundance of sweet potatoes, consider using them up in this recipe – you will LOVE how it turns out!
And… if you use Essential Oils, you can use Nutmeg just like we did – if not, you are welcome to use the spice instead, just adjust to your preference.
