Korean Style Cucumber Salad

A beautiful and delicious side dish, this Korean Cucumber Salad is a little sweet and a lot spicy - and a healthy way to enjoy a bounty of cucumbers!

Ingredients

Salad Ingredients:

  • 1/2 lb cucumbers
  • 1 tsp salt

Dressing:

  • 2 tsp soy sauce
  • 1 Tbsp chili oil
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 3 cloves garlic minced
  • 2 tsp rice wine vinegar
  • sesame seeds for garnish

Instructions

  • Start by slicing the cucumbers into thin rounds or your desired shape.
  • Place the sliced cucumbers in a bowl and sprinkle 1 tsp of salt over them. Set the bowl aside for 10 minutes.
  • After 10 minutes, strain the excess water from the cucumbers. This step helps to remove excess moisture from the cucumbers.
  • In a separate bowl, combine all the dressing ingredients: 2 tsp soy sauce, 1 tbsp chili oil, 1 tsp sugar, 1 tsp sesame oil, 3 cloves of minced garlic, and 2 tsp rice vinegar.
  • Stir the dressing mixture until the sugar is completely dissolved. Add the prepared dressing to the sliced cucumbers. Toss the cucumbers with the dressing, ensuring they are evenly coated.
  • To finish, garnish the salad with sesame seeds for added flavor and texture.
