Let me tell you a little secret: my kids love chocolate chip cookies.
As much as they love them, they don’t ask for them nearly as much as they used to. I’m not sure if it’s because they think I’ll say “no – you can’t..” – or, they truly are, at times, disinterested. My kids also love to eat garbanzo beans from the can (or, fresh beans from the Instant Pot).
They can also plow through 15 pounds of bananas in less than 24 hours, 5 pounds of apples in a mere 3 hours, and they go wild and crazy for mini peppers. I can’t seem to keep those things in the house.
I love cookies too – but traditional chocolate chip cookies are laden with so much sugar and butter that they really aren’t the most healthy. We’ve been trying to cut back on grains for the kids and processed sugars – these cookies are perfect for that.
The recipe makes a very small batch – so if you are looking for a larger recipe, just double it up. They are chocolatey, chewy, soft, and just the right amount of sweetness that makes them a wonderful healthier alternative.
Even better… take it up a notch – we made a second batch of these cookies and subbed the milk for orange juice, and added 3 drops of Orange Vitality Essential Oil for a wonderful twist.

- 1/4 C. coconut oil, melted (measure from melted)
- 1/4 tsp baking soda
- 1 C. almond flour
- 1 Tbsp organic maple syrup
- 1 Tbsp milk
- 1 tsp vanilla extract
- 1/4 C. chocolate chips
- Line a baking sheet with parchment paper or a baking mat and preheat the oven to 350 degrees F.
- Melt the coconut oil and measure, then combine with the milk, maple syrup, and vanilla extract.
- Mix in the dry ingredients just until moistened.
- Carefully fold in the chocolate chips.
- Spoon a tablespoon of dough onto the baking sheet, and form into a circle - push down slightly to ensure they spread out and not bake "up".
- Bake at 350 for 8-12 minutes or until lightly brown. Remove and allow to cool completely before removing from the baking sheet.
- Store uneaten cookies in a ziploc bag.
- Dairy free: substitute almond milk or orange juice for the milk.
- Essential oil infused: For a hit of orange in the cookies, substitute orange juice for the milk and add 3 drops of Young Living Orange Vitality to the batter before baking.
If you are using Orange Vitality Essential Oil in your cookies, we recommend Young Living.
Make sure you are using proper essential oils – avoid the synthetic fragrance oils you buy in most grocers. You want something that is certified as GRAS (generally regarded as safe) by the FDA. You also want to avoid the synthetic oils sold at grocery stores because they are primarily for aromatherapy use only (not to use internally).
We use Young Living because they have a vitality line that is labeled for dietary use, and we can follow them from seed to seal – we can also visit the farms and participate in the harvest any time (transparency is pretty important to me).
