Maple Cinnamon Sweet Potato Bread

Equipment

  • 9x5 loaf pan

Ingredients

  • 1/4 C milk
  • 1/4 C coconut oil melted (or, substitute butter)
  • 2 eggs room temperature
  • 1/2 C maple syrup
  • 1 C. sweet potatoes cooked and pureed
  • 1/2 C brown sugar
  • 1/4 tsp ground ginger
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 2 C. all purpose flour

Instructions

  • Preheat the oven to 350 degrees F. Butter & lightly flour a 9x5 loaf pan.
  • In your KitchenAid, mix the coconut oil or butter, brown sugar, sweet potatoes, maple syrup, eggs, milk and vanilla until well blended.
  • Stir in the flour, baking powder, baking soda and spices. Mix just until combined.
  • Scrape the batter into the prepared loaf pan - shake to distribute evenly.
  • Bake for 50-60 minutes - until a toothpick or knife inserted in the center comes out clean.
  • Remove from the oven and let cool 10-20 minutes.. then remove from the loaf pan and continue to cool.
  • Store in an airtight container.
