Maple Cinnamon Sweet Potato Bread
This Maple Cinnamon Sweet Potato Bread is perfect for breakfast OR for lunch. The subtle flavor of cinnamon, ginger and maple wrapped into one loaf.
Servings 10 slices
- 1/4 C milk
- 1/4 C coconut oil melted (or, substitute butter)
- 2 eggs room temperature
- 1/2 C maple syrup
- 1 C. sweet potatoes cooked and pureed
- 1/2 C brown sugar
- 1/4 tsp ground ginger
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 tsp baking powder
- 2 C. all purpose flour
Preheat the oven to 350 degrees F. Butter & lightly flour a 9x5 loaf pan.
In your KitchenAid, mix the coconut oil or butter, brown sugar, sweet potatoes, maple syrup, eggs, milk and vanilla until well blended.
Stir in the flour, baking powder, baking soda and spices. Mix just until combined.
Scrape the batter into the prepared loaf pan - shake to distribute evenly.
Bake for 50-60 minutes - until a toothpick or knife inserted in the center comes out clean.
Remove from the oven and let cool 10-20 minutes.. then remove from the loaf pan and continue to cool.
Store in an airtight container.
