Creamy Arugula Spread
Avocado and cilantro balance out this arugula spread making it an excellent choice on sandwiches or stirred into pasta sauce!
Servings 1 C.
- 2 C. arugula
- 1 bunch cilantro
- 1 avocado peeled and pitted
- 1 lime
- 4 cloves garlic peeled
- 1/2 tsp salt
- 1/4 tsp pepper
- 3-4 Tbsp water + additional as needed
Add all ingredients in food processor or blender and pulse until combined.
Add 1 Tbsp additional water, only as needed.
Refrigerate in a tightly covered container for up to one week. Use as a spread on sandwiches, stir into pasta or even roasted potatoes.
