Healthy Apple Cinnamon Muffins

A delicious and hearty muffin that combines yummy diced apples with lots of cinnamon for a healthy treat to put in the kids lunchbox, or eat after dinner.

Ingredients

  • 2 eggs room temperature
  • 1/2 C. applesauce
  • 1/2 C. kefir or, greek yogurt
  • 1/3 C. coconut oil melted
  • 1 tsp vanilla extract
  • 1/2 C. honey or, maple syrup*
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 3/4 C. all purpose flour
  • Optional: 1 Tbsp Organic Coconut Sugar to sprinkle on the tops before baking
  • 3 apples cored, peeled and diced

Instructions

  • Preheat the oven to 350 (if using honey) or, 425 if you are using regular maple syrup.
  • In a large bowl, combine the wet ingredients.
  • Gently add the dry ingredients just until moistened.
  • Fold in the apples into the batter. The batter will be thick and lumpy (that is OK!)
  • Level out into the muffin pan and divide the batter equally.
  • Bake for 13-15 minutes - remove when the toothpick inserted in the center comes out clean.
  • Let cool completely before enjoying.
