Homemade Kefir Pancakes

Use your extra kefir to make deliciously light and fluffy pancakes for your family! This is a wonderful way to use extra kefir you might have on hand!

Ingredients

  • 2 C kefir
  • 2 eggs
  • 4 Tbsp butter melted
  • 2.75 C. all purpose flour
  • 1/2 tsp cinnamon
  • 2 tsp vanilla extract
  • 2 Tbsp sugar
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1 Tbsp butter for the griddle

Instructions

  • Mix the kefir, eggs, sugar and vanilla in your mixer.
  • Add the melted butter and mix well.
  • Add the dry ingredients to the kefir and egg mixture - quickly stir to combine.
  • Let rest for 5-7 minutes.
  • The batter should resemble that of a very thick sour cream.
  • Heat your skillet to medium heat and toss on 1 Tbsp butter (or less if you wish).
  • Place 1/4 C batter on the skillet, and cook on each side until golden.
  • Serve warm with maple syrup.
