Homemade Kefir Pancakes
Use your extra kefir to make deliciously light and fluffy pancakes for your family! This is a wonderful way to use extra kefir you might have on hand!

- 2 C kefir
- 2 eggs
- 4 Tbsp butter melted
- 2.75 C. all purpose flour
- 1/2 tsp cinnamon
- 2 tsp vanilla extract
- 2 Tbsp sugar
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1 Tbsp butter for the griddle
Mix the kefir, eggs, sugar and vanilla in your mixer.
Add the melted butter and mix well.
Add the dry ingredients to the kefir and egg mixture - quickly stir to combine.
Let rest for 5-7 minutes.
The batter should resemble that of a very thick sour cream.
Heat your skillet to medium heat and toss on 1 Tbsp butter (or less if you wish).
Place 1/4 C batter on the skillet, and cook on each side until golden.
Serve warm with maple syrup.
