We all have that 1 easy to put together dinner that we rely on in a pinch when we have a busy day ~ right?
At least I hope I’m not alone in my struggles!
In a perfect world we would all be taking hours to make dinner and everything would be hunky dory – but on those days where everyone is all over the map, we have to have something…
So the story goes ~ between track practice and piano practice, a busy week of spring break, picking up food at the farmers market, milk at our milk farm, and entertaining a host of people showing up at our house, it has quite literally been an absolute disaster.
Making taco salad seemed to bring a sense of normalcy in a week when my CSA graced me with not just one but 2 HUGE romaine lettuce in my veggie bag…. I am almost certain I didn’t ask for 2.
Nonetheless, I’ll take it. I love romaine.
We had everything we needed to make this salad, and we threw Ground Beef in the Instant Pot to make this Taco Meat while we made a mad dash to the post office.
What was humorous about our trip was that we had less than 15 minutes to get in the truck & drive there and I asked my kids to put their shoes on.
Apparently, “put your shoes on” means different things to different people. Hey.. at least they had them on, right?
Came home to perfectly cooked ground beef, and literally threw this together in minutes. My 10 year old sat down to eat, and ate *almost* all of her plate… until her 5 year old brother jumped in to finish it off.
“Mom, this is AWESOME!”
Our 7 year old overheard the word awesome and decided to jump in on the fun too … not even ten minutes later, went so far as to carry his plate to the sink (which never happens!) and said “Boy, did I do some damage to this taco salad!”
Which obviously means it was ridiculously good 😉
Ingredients
- 1 bag Organic Corn Tortilla Chips
- 1 lb Taco Meat in the Instant Pot
- 2 medium tomatoes, diced
- 1/2 head lettuce, shredded
- 3 green onions, chopped
- 1/2 C. shredded cheese
- 1-2 avocados, seed and peel removed, and sliced
- additional items: sour cream, salsa
Instructions
- On each plate, spread a thin layer of corn tortilla chips.
- Top with lettuce, taco meat, then tomatoes, green onions, shredded cheese, and then any additional items ~ ie. avocado, sour cream, or salsa.
- Serve with gresh guacamole, if desired.
