When it comes to food, I’m a huge fan – I mean, who isn’t? Everyone I know loves to eat – me included. One of my favorite foods is fish tacos – and while I’m a huge fan of Rubio’s (who isn’t?)… taking 7 of us here to eat will totally blow our budget.
Every so often my husband will come home with a plate from Rubio’s for me ~ and I love those days, because he knows that I can inhale (literally..) fish tacos. The sauce is what gets me every time.
And while I’ll always love a good plate of fish tacos from Rubio’s .. sometimes it’s easy to make them at home yourself. Even better is when you can whip up your own Cilantro Serrano Cream Sauce to pour over the top of those fish tacos – Yum!
This sauce is super easy to make and keeps wonderfully in the fridge. You don’t have to use it on fish tacos necessarily – you could use it on chicken tacos too.. or as a dressing for any of your favorite meals. I just think it tastes AMAZING on fish tacos!
Use 2-3 serrano peppers to give it some kick – if you love your food a little more spicy, throw in an additional pepper.
Just remember that it’s easier to go hotter than to get to zealous and rock out a trip to the Emergency Room because you thought you could handle the heat.
The original recipe called for heavy cream – and while we usually have that on hand at home, a full cup is a little heavy for us in terms of calories/fat – so we used greek yogurt. Any greek yogurt will work great (as long as it’s plain) – you can even make your own yogurt in your instant pot – which is exactly what we did for this recipe.
- 3 cloves garlic
- 2-3 serrano peppers
- 1/2 bunch cilantro
- 1 C. mayonnaise
- 1 C. plain greek yogurt (or, heavy cream if you don't mind the fat content)
- salt/pepper to taste
- In your blender, combine all of the ingredients.
- Puree until smooth - 20 to 30 seconds.
- Keep refrigerated - a canning jar is great for storing in your fridge.
- Use on fish tacos, chicken tacos or serve as an appetizing dip.
